As part of our ‘Roughway Originals’ series, we have been working with local BBC Masterchef winner Julie Friend to put together some fantastic recipes. All of the recipes use produce that you can buy from us such as Kent cobnuts and cherries.
With the nation currently baking and cooking in our masses due to the lockdown we thought we would share some of our favourites:
Wild garlic and cobnut Pesto
End the repetition and reliance on tomato-based accompaniments with pasta and create a versatile and delicious cobnut pesto. Without a doubt Kent Cobnut pesto adds something really special to any dish and its use of wild garlic makes it all the fresher and more delicious.
On top of the flavour we particularly like how the cobnut pesto provides valuable nut protein and vitamins in every day pasta dishes. A very smart addition and approach to meal prep!
A bonus of this pesto is how long it lasts in the fridge meaning it is always easily to hand and can be used when time is short.
Kent Cobnut and raspberry brownies
Homemade brownies are scrumptious at the best of times but with large chunks of cobnut and juicy British raspberries and you have a treat almost second to none. Warning these will go fast!
Chocolate and cobnut torte
This recipe is fantastic. It is not sickly sweet and the mix of chocolate and cobnuts has a real sophistication of flavour. You will find that this cobnut torte recipe is great as a dessert with fruit and cream or as an accompaniment to a nice cup of tea!
This recipe is also a gluten free cobnut recipe. So is certainly a good one to have to hand if you want indulgence for those with an intolerance to gluten
Cobnut crusted goats’ cheese
We love cheese and this really adds something special to cheese. The crunchy crumb is delightful and is a great conversation starter when entertaining. If you find goats’ cheese to strong then this works very well with other cheeses such as camembert or any other cheese you fancy coating!
